If I don't take all of the required courses, but do take most of them, what will my chances be?

I am a senior who has taken about half of the required courses for med school. I don't want to apply to med school for about a few years after I graduate - I want to work and do other things before. I want to take other courses since it's my last year of college - language courses, random upper div courses in things I'm interested in.

Can I apply to med school in the
1) US (MD/DO)
2) Caribbean
with only SOME (like 70%) of the "required" med school courses
with GPA and MCAT scores that are competitive otherwise,
and still have a nonzero chance of admission?

Eyeballing your question, I want to say with half the required courses your chances are half as good, but I think we both know that doesn't pass the sniff test.

Except for a handful of schools, you aren't obliged to have completed all the requirements prior to application, but you do have to complete them before med school matriculation and submit a final transcript to prove it. Taking the MCAT prior to completing the core prerequisites generally doesn't work out well, in terms of getting a competitive score, but self study is possible.
 
Just research the schools that don't have any pre-reqs in terms of undergrad courses. ETSU, for example, lists them as recommended.

If you don't take courses that the schools require, your chance of matriculation is zero.
If you don't want to take particular courses, make sure that the schools you want to apply to do not require them.
The Caribbean only requires a check that clears and a pulse. That should be good enough for at least 2 semesters. After that you probably need to actually perform up to some minimal standards.
