Yes single spacing is fine for your personal statement. I believe research papers are submitted double spaced though (that might be what the professor was referring to?).
From my memory, if you double space, that takes two characters. For single spacing, it takes one character. So you will burn up one character if you double space!

Actually, yes it is. I think some people may have interpreted your question as double SPACING like leaving an empty line between each line of text in a paper.
Your question refers to hitting the spacebar twice after a period. Technically in formal writing this is the correct format.
HOWEVER, just using one space is fine. It is really nitpicky and won't make a dime's worth of difference. If you need 50 extra characters to say what you need to say, then just use one space.
I'll just use one space myself. The ADCOMs aren't going to keep you out of dental school over this 🙂
