I agree with my husband, it was actually pretty cool, at least the way it's done at WVU. We had gross anatomy for one lab session, and it was optional but 90% of the class showed up. The cadavers were already dissected, so all of the organs were detached and removable. I volunteered to help out, so I got to pick up all sorts of them so we could get better views. It was actually helpful in regards to the class, plus it's a lesson I know I won't forget!
As a side note, keep in mind that the faces will always be covered, so it's not like someone is staring at you while you're taking out their lung. If it is required attendance, there will probably be some sort of alternative activity, which I would recommend especially if you're the type that makes jokes when they're anxious. One person in my class got a pretty serious talking-to afterwards for cracking a couple jokes about a male donor's 'size'.
