I have been looking everywhere and I can't seem to find any data on how many applicants each site gets for pre-doctoral internships. Does anyone know where I can find this information? I am trying to apply and want to figure out which sites would be considered a "reach" vs a "safety" based on the applicant to acceptance ratio. Thank you!

It's all available through the APPIC directory. Each site is expected to report the number of applications received, the number of applicants interviewed, and the number of available internship slots.

I found this little article helpful for calculating some crude estimates of "safety" and "reach" sites: A little math can improve your internship matching odds

I would emphasize that the most mathematically competitive sites aren't necessarily the best; the oft-repeated mantra about focusing on "fit" is really true. Find internship sites that give the training you want for your future, and apply. Use the keyword search function on the APPIC database, do some Googling, ask around in your program/practicum to get together a long list of sites to whittle down over the next few months.

The raw numbers will be thrown off by the specialty sites. i.e. peds, forensic, etc., will have fewer apps bc fewer people are interested/qualified. Geographically undesirable might be a small small small suggester of slightly safer sites.
