Has anyone used a type of interproximal wedge that is made of plastic and has a vertical piece of metal coming off the top of it that acts like an interguard? If so, anyone know what company makes this product and/or where I can get it?

I believe they're made by Garrison Dental Solutions. Check out the fender wedges on their website here

I have only used them in sim lab but they are really good when you have a test and you want to make sure you don't nick the next tooth

Pretty great idea, I wish my dental school stocked these. However, for over a dollar a piece, I think I will stick with a wooden wedge and a piece of matrix band. Thanks for the post.
