Many of these students apply to many schools, up to 20. So does that mean if you get 6 different interviews you fly to 6 various states to interview for a slot you may not get. That sounds rather costly; would any of you recommend it?

Just think of it as an investment for your future. Well worth it in the end.

If you can afford it then sure, although I personally think it's absolutely absurd to apply to 20 schools. I think 7-10 is more realistic.

I have a very average GPA and could only afford to apply to 4 schools and will realistically only be able to fly to 2 interviews (and drive to my state school interview). If you have the financial means to apply to more to increase your chances, then do it because you don't want to be in my position (absolute chaotic stress and panic that the few schools I applied to won't want me, with the very real possibility of wasting an entire year to have another chance).
