Is there such thing as once a med school accepts you, you can ask for a year off and they'll hold your spot until next year?

Yes - this is known as deferment. Not all schools offer it, and those that do will usually require you to put in a request by June or so of the year before you want to start.

That's called a deferrment. Whether or not a school will grant you a deferrment varies from school to school and usually (from what I understand) there needs to be a somewhat compelling reason for requesting one.

Is taking time off not a good reason for deferrment? What kinds of "reasons" can you give to get a deferrment?

This is a deferrrment. They're hard to get depending on the school and the reason, but you might look into getting a deferrrrment instead.
