Is this a good plan if I take another gap year?..

I definitely think retaking the MCAT and a few classes along with volunteering will be in your best interest. It will give you a more solid app for a following cycle so you don't waste money with this one. It will especially hurt you since you have no volunteer experience. That's not something you want to be putting on your apps.

I think it's on the low side. You don't meet the cut off for some schools ( I think KCUMB's is 3.25.) Did you make a C in any of your science classes or pre reqs? If so, I would suggest retaking those.

You could be automatically screened out at some DO schools with the 3.0 GPAs (KCU comes to mind) though the steep upward trend in the last two years may help you at other schools. There is no point to apply with the 22 MCAT. The combination of GPA/MCAT is lethal at almost every DO school, and you must take the gap year. That said, your plan, if fulfilled, will put you back on track. Consider adding more extracurricular activities as you get back to the "rhythm" of schools.
 
A really nice place to be is having at least a 3.4 GPA and a 26 MCAT. If you have a lower GPA, you would want a higher MCAT or vice versa. The idea is to just not have too many holes or red flags in your application. The more holes and red flags, the harder your chance to get in. Its best to apply with as perfect of an app as you can muster up. I personally think I would take the gap year. I ended up taking 2 gap years and they were very helpful. It gave me time to really get my app to the condition that I felt comfortable to submit and know that I essentially had a 100% guarantee of an acceptance. You can PM me if you want to chat more.
 
also shadow a DO since you are in contact with them and see if they can write you a LOR
