I already read through the whole kaplan book for this, but I feel like I missed the majority. I pushed my exam date back, so I am basically restudying. I'm now solely using khan academy videos for psych/soc, along with the reddit mcat khan academy psych soc notes, which is basically a script to go along with the video.

I am just copying and pasting from this document and using cloze deletion in anki to delete segments of text that I will have to fill in when I review the cards.
Is this effective?

Whether something is effective for a particular test-taker depends on that test-taker individually. Some people love Anki decks and do well while studying from them. I personally think Anki decks are a foolish waste of time. People differ.

So in my opinion, this isn't as effective as actually doing practice passages - Khan Academy practice passages are a great, free resource. Use them. Target your studying to areas you're struggling with.

I got a 132 in the section. I made anki cards but only because I was studying over 6 months. If you are studying over less time than you probably don't need to do that. Just make sure you go through a whole P/S book, either Princeton or Kaplan (EK doesn't cover everything) and then go through all of the Khan Academy Videos. There are good notes someone posted over at Reddit-MCAT. I thought Princeton + Khan Academy covered pretty much everything. There were no concepts on the MCAT I didn't know

I found the best way to learn Psych/Soc is to learn real world examples of each abstract concept. That way I am not tripped up when the AAMC gives a really nuanced example or puts 2 terms with really close answers on it.

I can't say as to the Anki decks because I think they're really really stupid, but if it works for you, then it works for you. So the Kaplan book will prepare you pretty well in terms of content knowledge for that section. The Khan Academy practice passages in that section are also amazing. You will soon realize that a lot of P/S is about experimental design and interpreting the results of experiments. That's the important skill to have.

Know how to interpret experiments (needed for the science sections), know how to read well (CARS), and memorize every P/S term.
