I am not sure about another letter thing. My school does not have a commitee or letter writing service. Is it essential that I use a letter writing service or can I have the Prof. send the letters directly to the medical schools? I would prefer not to use a service. If they arrive at different times is that ok? Will the Schools lost track if they are send different?

No, you can send them directly. The letter services are nice because if a school misplaces a letter, then it is much easier to have them resent to the school rather than going and asking the people that wrote the letters (and they may have lost their copy as well, leading to a larger problem). But in reponse to your question, schools well take your material at any time as long as it shows up by the deadline set by the admissions office.
