I have been unable to find an answer to my question. I am getting ready to hand in everything my recommenders need to write the letters (recommendation forms, envelopes, etc.). I am a little confused as to how to address the envelopes. Some of the programs I am applying to want the letters to be sent in a packet with other application materials.

Do I still need to address the envelopes if I am picking them up from my recommenders?

Ask your recommenders to put them in an envelope and sign their name across the seal. Then include them in the app packet.

...and have them put a sticky not on the envelope, indicating the name of the school, since the name will mostly be inside, on the address.

For schools that could have the recs sent directly to them I addressed and stamped the envelopes. For other ones I simply printed the name on the envelope and then put a post-it that said "Return to Student". They all have Ph.D.'s they will figure it out. I promise. 🙂

Good luck.

Definitely make sure you have them sign across the seal if they are not being mailed directly to the schools by the recommenders. This way the schools will know they weren't tampered with. I think I remember this being required by some programs but that seems too long ago to remember anything specific. This is probably also the most practical approach anyway since you're better off having all of the application materials in the same packet.

I prefer that my recommendees give me printed address labels that I can stick on our institution's official envelope. For letters that need to be mailed, the recommendee also provides the appropriate number of stamps. Whether I'm sending the letter to the institution or back to the student (signed across the seal on the official envelope), I prefer to use the full address on the envelope. Regardless of delivery method, it is easiest to use a consistent format for business correspondence and a full address means it's also less likely to end up in the wrong place (remember that programs get piles of these things).
