LOR from an assistant manager ok?

I'm of the belief that a letter writer's title is less important than how well they know you. I may be completely wrong on this, though. Anyway, if the assistant manager knows you well and can comment about your interpersonal skills, morals, ethics, personality etc etc, I'd say they'd be a fine letter source. Good luck.

Sure, but a letter from the local burger shack manager < letter from a PhD in anything.

Extreme example, but just trying to show that title might matter more than not.

Perhaps; like I said, I may be completely wrong! So many undergrads have minimal contact time with their PIs, that a manager of any sort may be able to comment on that student's work ethic/manners/morals/problem solving skills better than a PI who was too busy to help that undergrad. I think that LORs can demonstrate more than just intellect; though, you are right that a letter from a PhD would probably carry much more weight regarding a student's intelligence than a burger joint PIC.
