LOR from Science professor

I know many school require at least one LOR from a science professor.
Do I have to get it from those who have taught me?

Yeah. My research mentor is still postdoc but he teaches at CC. And the other option he has told me is that he writes and his supervisor (tenured) co-signs it.
Anyone has done this?
