LOR & Multiple Gap Years

I've been scribing in an urban ER for almost 2 years and definitely think one of my physician co-workers could write me a strong LOR. That being said, I won't be graduating until Spring 2022, after which I plan on joining the Peace Corps, taking MCAT after returning and applying MD in 2025. At that point, would LORs from 2019/2020 even be worth having?

It's arguably better than nothing, just keep in touch with the physician and have him update his letter when you start applying.
