LOR question... who to ask?

I have two of my three LOR writers chosen: an OT I volunteered with extensively and a prof I worked with in a health psychology lab for two years. However, I'm having a hard time deciding who I'd like to write my third letter.

I'm leaning toward asking a woman I worked for as a nanny for two years, since one of my schools wants a letter to be from an employer. However, I'm worried this letter may not be valuable to the other programs I'm applying to, since it wasn't a healthcare-related job.
My other option would be to ask another OT I'm recently started observing (though she doesn't know me very well at this point), or the special needs educator in the classroom I recently started volunteering in (though again, I just started volunteering there and I'm not sure she'd have much to say).

So, which would be better, do you think? A really enthusiastic letter from a former job that involved working with kids but was not at all OT-related, or a subpar letter from a second OT or special needs educator?

An employer is definitely a good choice because they will know your work ethic, dedication, commitment, etc.
 
I agree with Jewel114786, and employer because that person can add value to the letter describing your characteristics. As long as you have and OT to write one of your letters I believe you are in good standing.
