I know that most schools require 2 science, 1 nonscience.

I had five writers lined up: 2 science, 1 nonscience, 1 research (nonscience), and 1 hospital volunteer manager

Right now, I have all of the letters in except 1 of my science letters. Should I submit my letters now without that science, or delay until she gets the letter in?

Also, I will have an doctor letter, but it won't be ready for two weeks-ish.

Will i be rejected once they see i only have one science? I a non-trad, graduated 2011.
 
Most schools have many different definitions of "science" letters. They may be classroom only or could include research. For the schools that you don't want to wait, I would give them a call and explain the situation. Most admission offices are very helpful.
