Based on my descriptions, who should I ask? Insights will be appreciated!

It sounds like your Chinese professor only know about your life aspirations because you told him about them in your writing. Your English professor on the other hand seems to have a genuine desire to get to know about you outside of just your poetry. The fact that you've been able to discuss your life/aspirations with him despite not having the opportunity to do so in office hours, makes me think that he would be an individual that would take writing a LOR for you very seriously.

My vote is for the Poetry professor.

Tough call, I'd probably say #1. At the end of the day the most important thing is that you choose the person that knows you the best (they sound like they both liked you).
