I have 5 of the 6 letters that I need to apply to all the schools I want to, but I find myself short a letter of rec from a science professor. The letters that I do have are actually really strong, but I don't have any strong relationships with any other professors. I tried emailing 2 professor's whose courses that I did well in but didn't get to know, but no response yet. I'm toying with the idea of taking a class this summer just for the purpose of getting a letter from the professor, but this feels like a rash decision. Especially since I might have the committee letter that some schools will accept in lieu of professor recs by then. If I were formally audit a course this summer, would a letter from this professor count? Or must the course have been taken for credit? And, yeah, I'll direct some of these questions towards the schools but they'll take a few days to get back to me. Until then, what do you guys think?

I wouldn't take a course. Hopefully, you'll get that committee letter and then you won't have to worry about it. If after a week or two the professors you contacted haven't responded, go to see them and ask them directly. I don't see a problem with using either of them, even if they can only write a mediocre letter, if your other 5 are strong, I don't think it will hurt you and it will satisfy the requirment.

Would a letter from a professor from public health class count as "science"?

Maybe some places it would, but I feel like a lot of schools ask specifically for BCPM. Sitting in your shoes, I'd try to lean on a couple of those profs. whose courses you took and did well in. Obviously, it's not going to be a great letter, but they're probably used to writing letters, and one mediocre letter out of 6 (!) is not going to be a gamebreaker.
