when should I get them all turned in to my school's committee if I'm applying this cycle (planning to submit early June)?

Ask your premed advisor. Does your premed committee do interviews and how quickly do they send out the LORs after you turn them in. Ideally ask you recommenders at least a month before the due date. You due date should be based on the factors I outlined above.
