I'm originally from Canada and I had my heart set on OVC for EVER. I also thought of international schools as a last resort, but then I caught the travel bug... eep. lol.
I've spent a lot of time getting info about international schools and I've pretty much made the decision to go international. The funny thing is... recently I've been looking at UCD. One of my friends (Also from Canada) is in her first year there, and she recommended it to me.
The most important thing when looking at Int'l schools is to check if they're accredited by AVMA. If you don't already know, they have a list of all the internationally accredited schools on their website.
The only hassle about int'l schools is that they're all a bit different, so you may need certain pre recs for one, and not the other. Also, for the most part, they expect you to have really good marks and/or really good experience.
All in all, its totally worth having a look into. In the end, as long as the school is accredited thats all that really matters.
As for the life change, I'd strongly recommend doing some sort of long term travel before you go to vet school if you're unsure of how you'd go. I've been in Australia since July of 2010, and I'm totally loving it- but being away from friends/family is harder on some people then others. So nothing worse then getting accepted to some int'l school and then hating it because you're away from everything you know. Travel also looks really amazing on a CV and is priceless in terms of life experience. But you said you went to Ireland a few years ago so maybe you're already travel 'experienced'.
In terms of pets, my dog passed away last June and since then I'm pretty reluctant to get a pet now because I know in the next few years I want to travel and I won't be able to take them along. My friend at UCD took her dog with her, but he came a few months after she arrived. Make sure you look into the requirements for them and make a decision based on that. For example- if you're bringing a dog into Australia, it has to be quarantined for like 6 months- so thats something to look into.
