I am currently registered to take my MCAT on May 23. I have been doing ok but feel like I need a bit more time to prepare. I only have 1 more day to decide whether or not to reschedule it for sometime in June. I don't know how much it would affect me to get my score by July.

First batch of interviews typically go out late June/early July. Using the throwaway method along with some prewriting, you can get completed apps sent out once you have your score. I wouldn’t call that super early, but certainly not late. What are your practice tests looking like? What score do you think you could achieve with the extra time? Taking the test once and only once is what you should aim for, but applying early can be important too.

Do NOT take the MCAT until you are sure that you are ready to do your best. Your MCAT score has a large impact on your chances of admission and you really don't want to take it twice. Your future self will thank you if you measure twice and cut once.
