If I were to take the MCAT august/september of 2015, could I matriculated into medical school Fall 2016 or would I have to take an extra year off and go in Fall 2017?

You'd want to go for 2017. Your odds are drastically reduced as a late applicant, and applying in Sept/Oct is EXTREMELY late

Thank you for the info! So if I were to take a gap year and aim for fall 2017, what would be the absolute latest I could take it next (school) year? Could I still take it next may or June and not be considered a late applicant?

Yes, ACMAS doesn't verify applications until early July so you can take in May or June. However, unless you're absolutely killing it on practice exams (and even then maybe still) it is a good idea to take it slightly earlier than absolutely necessary in case you want to re-take.
