Will taking the MCAT in January be in time for SMPs such as BU, Tufts, Cincinnati, Case Western, and UNT?

I seem to recall UNT's deadline catching me by surprise. Case and Cincinnati you'll be fine.
SMP's tend to keep a good number of seats open late into the cycle because they're typically looking for bubble applicants, many of whom don't apply until they realize that their med admissions cycle isn't going to work out later in the game.

If I have my application complete by February since thats when the scores will be released, I will be late in the cycle competing with a hoard of waitlisted applicants with my low GPA? SO my chance of getting into SMP will by VERY VERY SLIM right?
Is it best for me to put this off for another year and apply for Fall 2018? It's now been 3 years since I have graduated and I REALLY DON'T want to waste another year doing research.
