MCat Scheduling/Interview Process

Hello I'm relatively new to all of this and am still in the formative phases of my thinking on the matter....

I am in no particular hurry since I'm already 38 and the difference between 12 months here or there is not crucial although like everyone I gather the sooner these things can be completed the better.

I have an undergraduate degree in business/liberal arts whereby having just quickly gone over my old transcripts I have taken my Calculus, My Statistics, My basic chemistry, Psych and Sociology as well as a Biology Genetics Course without a lab.

That leaves me just doing some quick calculations in my head with Organic Chem I & II, Physics I & II, and I figure I'll take Micro and A&P since they seem to translate across .... I do not know whether it would be beneficial to schedule another English or math primer course since this work has already been done years ago ( I have quite a bit of graduate work mostly in Law so I would think that my communication skills would not hold me back)

My question is if I were to seek admission to a program of study beginning in let's just toss a date out there of Fall 2009... First off when should I schedule my MCAT's? And in addition, I'm assuming that on any application you would simply demonstrate for the faculty or interviewing party that you have scheduled your prerequisite sciences and will be completing them prior to acceptance/enrollment because obviously you would not have final grades for much of your spring coursework.

Maybe I'm wrong. Like I said I know very little of the process. I have been through the graduate game before, but also as last time I don't envision myself applying to Numerous schools and then tearing up where i live or my family to relocate to whomever shows an interest... I would be pretty centralized on the programs I would wish to attend.

But as a general rule, when do people recommend taking the Mcats? 6 months before an application? 9? 12? 2?
