Med School Application Process Help!

Hey everyone,
As applications are coming up I wanted to make sure I had all my information in order before I began. To make it easier I'm just going to bullet point my thinking process below, and if anyone has any tips or if i missed anything please let me know because personally my plan is too:

1) When primaries are able to be verified, submit my application to a throwaway school without MCAT (since i haven't done it yet) just to get verified so later on i can submit my primaries soon as MCAT is available.
2) Study hard to get a great MCAT score. Test date July 22nd and scores will be released August 22nd (I know its late, but I've been busy until now sadly)
3) Focus purely on MCAT for now, but after the test start pre-writing secondaries and polishing primaries.
4) Submit primaries to all schools (DO and MD) august 22nd.
5) Return secondaries asap, hopefully before labor day as many people recommend this.
6) Pray for the best 😛
If all goes to plan would this timeline be okay?

Also, I had a question about letters of recommendation (LORs). How many is a good amount and who should i be focused on asking? I've volunteered at a hospital for most of my undergrad, and shadowed a doc for quite some time as well. I volunteered at various sports event and coach jiu jitsu to youth kids. However, for now i've planned 3 LORs all professors. One biomed professor (ex-dean of university) such a great guy, second orgo professor since i did really well and spent alot of time with him, and lastly an english professor (i didn't really spend much time with her, but i heard people say a non science LOR is required). My question then becomes, is there any more LORs i should look to add from my ECs or any i should remove/replace?
