So if I have multiple HPSP scholarship acceptances to multiple branches, each branch has to send my name up on a "scroll" to the senate in order for me to be approved to commission. My question is - can my name be on multiple scrolls for multiple military branches at the same time? Or can my name be only put on one scroll, meaning I have to commit to one specific branch?

One branch at a time. You would have to resign each commission after a period of time and then reapply to a different branch. I'm not sure why anyone would do that. 😉

Ah ok. So if I got accepted for the Army scholarship (which I prefer), but my Air Force application is still going, I should probably inform my AF recruiters that I no longer intend to accept the AF HPSP scholarship, that way they don't put me on the AF scroll. If my name was sent up on an Army scroll and also an AF scroll, what would happen?

You can only be administratively locked into one branch at a time. You'd have sign commitment paperwork before they send your stuff up to DC. If you're accepting Army, let everyone else know.

To clarify, the commitment paperwork is the statement of intent, correct? The form that isn't necessarily binding, but says that you will accept the HPSP scholarship (which is different from signing the actual contract/taking the oath). So you can only sign one form of commitment for one branch? (I have signed the one for Army, but haven't signed anything for AF) Thanks for your assistance!

You'd have to ask your branch liaison, but you can only commit to one branch at a time, so you'll have to choose one and inform your points of contact at the other branches that you're signing with Army. If you haven't signed anything with anyone but Army, I'd still let the other branches know as a courtesy.
