Is it possible to moonlight as a researcher, or post-doc, or whatever, during pathology residency, as a means of circumventing the ABP 6 month limit of research time a resident can spend on a research project? Looking to find a way of getting some research time in, and maybe a few extra bucks.

Thoughts on this?

I'm pretty sure the 6 month limit is meant to keep you doing clinical work for the remaining 6 months of your elective time. Meaning you can do as much research as you want, you just can't have more than 6 months off from clinical activities.
It's up to you and your program to decide exactly what that means.
