I know I probably should know this by now; however, all of the application material is just swirling through my brain. 😳
Can we submit our application to AADSAS and have them forward it on to our school picks without having taken the DAT? I was wanting to take in May/June; however, it would be much better for me to take it in August.

Yes you can (official DAT scores are not sent by AADSAS anyway), but a lot of schools will not look at your file until it is complete. The earlier you can get your file complete, the better...but you'll have to weigh the cost/benefit with the extra studying time. In other words, don't rush the DAT and get a poor score, but don't take too long studying and miss your opportunity.
