The Bio courses they have are:
Principles of Biology (Gen Bio 1 or Cell Biology)
Principles of Botany
Principles of Zoology

But there is no Bio 2 like other universities, it's a 3 semester series. Would taking either Botany or Zoo fulfill pre-reqs or should I take Bio 2 at another school?

For many schools, I doubt Botany or Zoo will fulfill that Bio 2 requirement. Do you know other pre-meds or friends who got accepted to medical school from your institution? What are other upper-level Bio courses available? My first impression is that you could probably take a higher-level Bio course similar to Cellular/Genetics/etc. (not Botany or Zoo) that could fulfill.

If those three classes are in a series, the three classes might constitute general biology.
The entire gen. bio class can be roughly divided into those three portions, so you should check with an advisor or registrar.

Just take cell bio or physiology. Doesn't need to be "general bio" to fulfill the pre-reqs.

As has been pointed out, you can take upper level classes to satisfy the prerequisite requirements. A "Biology 2" course should focus on the structure and function of living organisms. Zoology may work for this, but physiology may be better. I would also recommend that you speak with someone in the biology department or a trusted advisor. I cannot imagine that there are no other premeds at your school, so surely others will have addressed this issue in the past and your school should be able to advise you on whether schools have accepted XYZ course or not.

No one cares which courses you take as long as you have two bio courses and don't bomb the MCAT

My thoughts too. This is one of those questions where asking on a forum is not a very good way to get the correct answer.

At my school, we are on a quarter system where the lower division bio is:
Cell bio, zoology, botany

As a non-bio major, I took cell bio, zoology and had no problems satisfying the requirements for all the schools.

However, like others have mentioned here, I did take upper division genetics, microbiology, hematology and human physiology. So these may have helped fill in the gaps
