So C = right posterior cerebral artery

In my notes for class our professor put lesions to this artery would produce loss of left visual field in both eyes

Is this correct?

The PCA supplies the occipital lobe. Each occipital lobe processes the visual stimulus from the contralateral side of the binocular visual field. So yes, it is correct. The optic chiasma is the crossing point at which each side of the visual field gets paired up.

Left eye temporal + right eye nasal = left visual field
Right eye temporal + left eye nasal = right visual field

Left eye temporal + right eye nasal = left visual field
Right eye temporal + left eye nasal = right visual field

I agree with your first part. But for the second part, I think it is:
Left eye temporal + right eye nasal = right visual field
Right eye temporal + left eye nasal = left visual field

Please correct me if I'm wrong.

Yea, this is correct. Unless he's talking about defects of the eyes and INTACT visual field.

I guess I should have been clearer, I was talking about the visual field itself, not the nerve fibres that receive the stimulus.

Left temporal field (left nasal fibres) + right nasal field (right temporal fibres) = Left visual field
Right temporal field (right nasal fibres) + left nasal field (left temporal fibres) = Right visual field
