So I've one some new things that I think would be applicable to my applications in the last little while. Since I'm still waiting to hear back from a few schools would it be too late to let them know? Would that maybe boost me into an interview?

If you absolutely think this new addition to your application is something that gives you an advantage go for it. It is a little late for interview but I wouldn't give up. Go ahead and contact the schools letting them know of your new addition.
