BACON!! No pretty header for the next week or two, though, because I am visiting family out of the country and away from my computer.

Week number nine!

To reiterate the challenge:
Each week will have a different food posted, and the challenge is to prepare a dish highlighting (or at least utilizing) that food. You then take a picture, chow down, and then post it on the thread, with comments and (hopefully!) a recipe. Easy peasy!

Additionally, the food for the next week will be posted along with the current week, so anybody who doesn't have the ingredient on hand can put it on their shopping list.

Current Week's Food: Bacon (Fake bacon is totally free game, too!)
Current Week Dates: Monday, 7/16 through Sunday, 7/22

Next Week's Food: Rice (Gotta do an easy one because my grandparents wont eat anything weird!)
Next Week's Dates: Monday, 7/23 through Sunday, 7/29

Sorry for lateness, guys, at my grandparents house in Canada and the computer is a MESS. I spent four hours cleaning it up yesterday so it was fast enough to actually browse the internet, oi.

I know lots of people were excited for bacon this week, so I hope we get some good posts!
 
I didn't even think about the challenge when I bought bacon this week. Hmmm, gotta think of something..

I am definitely making something with the bacon we got from the pigs we raised this past year. I've been saving the rest for something special... 😍
Apparently SDN food challenges are special to me :laugh:
Especially when they give me an excuse to eat bacon... not that I need one :eyebrow:
 
Irish bacon isn't normal bacon. 😏

Actually, I think America is one of the only places that uses pork belly as bacon... so technically WE don't have "normal" bacon....

In Finland I could buy "bacon" and "American bacon," with the latter obviously being the kind I was used to. Maybe the same for you?

Yeah irish bacon is like a really fatty nasty piece of ham. I DESPISED traditional irish breakfast when we were there. We had an entire week of them paid for in advance too. :uhno:

Considering that I live in America, American bacon is normal for me! 😉

Haven't seen "American bacon" in the store, but then, I haven't been looking.

Hint: The bacon you are thinking of is called Streaky Bacon over here. It does exist! 🙂
 
I sucked hard on the Phyllo Challenge. 🙁 Sowwy. Out of town, etc. = not my kitchen or my supplies.

It is called streaky bacon here, but still not as easy to find and most Irish scoff at it.... 😕

Yeah but they also love whiskey, so what do they know about good anything! 😉

I put bacon on nearly everything, but I only have a picture of this masterpiece.

Bacon wrapped pork tenderloin. It was...amazing.

I dabbed some EVOO and herb rub on the pork tenderloins then wrapped the pieces of bacon around and used toothpicks to hold the bacon in place. Baked at 375 F for about 80 minutes.

OK, so you had lots of points for showing me yummy bacon.... and then they were all deducted with your use of "EVOO" 👎 🙄

Why??? I use that stuff allllll the time! Plus it keeps the bacon from becoming one with the aluminum foil.

I'm disappointed in the lack of bacon recipes. 🙁 I figured this would be one of the more popular ingredient choices.
 
I was really hoping to be able to make something, but haven't had the time to make anything this week. 🙁
 
I have had plans for months to make cupcakes with bacon. Even if it takes a few more months for me to get to it, I will come back here and post pictures and share with everyone.
 
For this week, I made soup and bread...bacon style! 😛

The above is pepperoni bread and potato soup in a bacon bowl. And yes, the cat (which does not belong to me) actually knocked down the bacon bowl of soup and made a mess. 😛

Pepperoni Bread

1 - Frozen Bread Dough Loaf
1 - Bag of Pepperoni Slices
2 - Cups of Shredded Cheese
A Few Strips of Cooked Bacon

Set the bread dough out to rise. It usually takes half a day for it to thaw and rise. Use a rolling pin to spread out the dough as long and wide as you can get it. You'll need a few tablespoons of flour to make sure the dough doesn't stick to everything. I try to make one big square. Spread the shredded cheese all over it. I usually use pepper jack cheese, but this time I mixed it with cheddar cheese. Mozzarella is the most common cheese to use, though. Spread the pepperoni slices over the cheese. Crumble the bacon and do the same. Sometimes, I will also sprinkle a little garlic powder over everything. Next, roll the dough up so that it has a snake-like appearance. Make sure to tuck in the corners. Place the roll on a greased cookie sheet. I added shredded cheese to the top of it. Cheddar is best for that. Bake at 350 degrees until the bread browns. Cut into slices and enjoy! People love it when I make this, but this past time was the first time it didn't turn out right. I was in a rush and didn't let the dough rise completely first. 🙄 It flattened as soon as I took it out of the oven, and the bread didn't bake right. Oops. You can't really tell that I messed it up though.

Potato Soup (I guess it's actually what you call "Loaded Potato Soup".)

2 - Potatoes
Shredded Cheddar Cheese
Salt & Pepper
Milk
Water
A Few Strips of Cooked Bacon
Spices

I don't have a set recipe for this one. I usually just throw ingredients together, and it turns out great! My boyfriend loves it! He likes my potato soup better than his mom's, and it was his favorite food growing up. First, peel potatoes and cup into small chunks. Place in a small pot, and add enough water to cover the top of the potatoes. I usually also add green onions at this point, but I forgot this time. Boil until the potatoes are soft, and then reduce the heat. Pour out some of the water so that it is below the top of the potatoes. Mash the potatoes somewhat, and then stir in a little bit of milk. How much you add is up to you. Add some shredded cheese and stir. I probably add about a half a cup, but again, how much you add is up to you. Crumble and add the bacon. Add a little bit of pepper and then some salt. I prefer it with a little more salt then I probably should add. 🙄 Add any spices. This time, I added onion powder and basil. I wasn't too big on the basil, though. Stir this together and then enjoy!

Bacon Bowls!

Ingredients: Bacon!

Use a small cup or bowl such as a ramekin to mold aluminum foil into a bowl shape. I didn't know have any aluminum foil at the time, so I used an oven safe cup and the back of a cupcake pan to place the bacon around. I saw this in a picture on Facebook this past week, thought it was a great idea, and didn't look up a recipe, so I really didn't know what I was doing at the time. I just wrapped the bacon around the cup and part of the cupcake pan in two layers (probably should have greased the cupcake pan and cup first). I baked it at 350 degrees with the bread, but then I raised the temperature to 375 after the bread was finished. I used cheap bacon which really didn't taste all that great or even cook as well as more expensive brands. It took forever for the bacon to cook enough to keep its shape, so I probably did something wrong. The good news is that it held the soup! Here's a proper recipe if you're interested:

Yes! They are! I was super excited when I first saw a picture of them at the beginning of this week. It was too good of an idea to pass up! And the recipes are posted!

Bacon Deviled Eggs
(With caramelized onions and cheese!)

Ingredients
6 hardboiled eggs, peeled and cut in half lengthwise
4 slices of bacon, cooked crispy (reserve fat for cooking onions)
1/4 cup onions, finely minced
1 1/2 tablespoons mayonaise
A small handful finely grated cheddar cheese
Salt and pepper to taste

Instructions
1 - Finely chop cooked bacon, remove any pieces that are chewy
2 - Saute onions over medium heat in a few tablespoons of the reserved bacon fat until soft and translucent, about 5 minutes
3 - Carefully remove yolks from hardboiled eggs and place in a medium sized bowl.
4 - Add all other ingredients and mash together with a fork until everything is well incorporated.
5 - Add salt to taste
6 - Place a heaping teaspoon of the yolk/bacon mix into each egg white
7 - Sprinkle with freshly grated pepper before serving.​

These are super yummy, although they're very different from the normal taste I expect from a deviled egg. I'd add a little more mayo if I made them again, since it's still pretty chunky, but my jar ran out. :laugh:

I'm also going to make bacon ice cream with the leftover pieces, but it won't be done till tomorrow.
 
So I've never made or eaten this before but when I saw the challenge I remembered my guy friends in college made a bacon log. You basically weave strips of bacon and cheese together. Then you cook, enjoy, and don't think about any potential lasting effects :laugh:. I know someone said as he was eating it he could feel his arteries clogging but it was soooo good.

Brussel sprouts, apples, & bacon! yum... Just dice up, throw together and saute with some olive oil.
