I've been studying for the MCAT for almost 2 months now, and I'm taking the test in 51 days (September 9). My scores have been pretty consistent.

NS Diagnostic (1/2 length): 503 (125/128/125/125)
NS FL 1: 508 (127/126/127/128)
NS FL 2: 506 (128/126/126/126)
NS FL 3: 508 (127/126/127/128)
Altius FL 1: 503 (major technical difficulties i.e. random time deductions and inability to scroll)
Altius FL 2: 507 (128/126/127/126)

I've consistently scored around 506-508 since I began studying. I only did two weeks of content review initially, because I felt fine with most of the topics. I've been doing the AAMC QPacks slowly, making sure I understand all the answer choices and why they're (in)correct. I'm about to start the SB and the official guide questions. I usually take 6+ hours to check my full-lengths, again reviewing everything slowly and making sure I understand all the questions and answers. After I check my FL's, I spend the next few days reviewing any content I may have missed and practicing passages until my next full-length.

Any ideas on how I can improve? I'm concerned that I seemed to plateau so early. Thanks so much!

What I'm saying is that I'm not sure the lack of an upward trend on non-AAMC material really means anything at all...especially since the scores you're getting are actually decently high for 3rd party testing materials, which tend to give really deflated scores.

Gotcha. Thank you!
