Hi, for two of the schools I am interested in applying in I have to take one more quarter of the english requirement. How does it work if you're already graduated with admissions to the schools? Do I have to explain to the school that if granted admission I will take it before the new school year and where do I do that in VMCAS? I only want to take the course if I get in, but I suppose I could enroll as a post-bac if they want to see me enrolled now as well? TIA!

Most schools will allow you to enroll (if there's still seats available) as a non degree student in whatever class that you're interested in taking. Most vet schools will allow you to have no more than 2 pre reqs remaining in the spring semester prior to matriculation. You can indicate a class not completed yet by stating it is in process on VMCAS.

I would also check with the schools first. Some schools might wave that extra quarter of an english requirement if you have already graduated.
