While writing my PS, there have been a few times where I've debated the correct way to type out numbers i.e. 2 vs two. 40 vs forty. I'm leaning more towards writing out every number but just wanted confirmation about this. Which would be best if I avoided?

Per Strunk & White, use the number in all situations rather than spelling it out.

In many style guides, the convention is to spell out numbers less than 10, and then use numbers for numbers 10 and greater.

I don't think it really matters. Just don't make a typo and you'll be fine.

As above. Spell out numbers less than 10, use numbers for 10 and greater. The only exception is that you should spell out any number that starts a sentence even if it is greater than 10.
