I entered the school year understanding that almost all apps open around January... now I'm seeing some are already open. Which schools are already accepting applications!?! Freaking out here!

Which programs specifically are you talking about? A lot of the formal postbac programs begin accepting applications October 1st. I assume you've been checking websites -- if the website says January 1st, then that's it.
