I only know Wake Forest, MUSC, and UAB well, but out of those that you listed, I believe UAB has the best reputation and probably the strongest training program that prepares you for GI or Cards. UAB residents almost always get the fellowships they want, plus GI and cards usually keep a few residents every year who want to stay. One of last year's chiefs went to Hopkins for cards and this year two chiefs are going to UNC for GI. As for MUSC, they have above average GI and Cards fellowships, and it seems like they will usually keep at least 1 or 2 residents per year for those programs. I think the same can be said for Wake Forest, although GI and cards are stronger at MUSC. Overall, though, UAB residents are probably more competitive nationally vs. wake or MUSC.
