Order of fuel usage? (glycogen vs. gluconeogenesis)

I was always under the impression that glycogen stores were depleted within a couple of minutes of exercising such as weight lifting, for ex.

However, during starvation, glycogen provides fuel from days 1-3 according to First Aid. From then on, gluconeogenesis takes over.

Can anyone explain how when glycogen breakdown stops and switches over to gluconeogenesis? Does it depend on the situation?
 
Rate of glycogen depletion during exercise is dependent on duration and intensity. Low to moderate intensity exercise depletes primarily fat and spares glycogen. High intensity exercise rapidly depletes glycogen stores
