I have a question regarding the PS. How do you talk about volunteer work here as opposed to the section dedicated specifically for EC? For example, in my PS, I wanted to talk about what I really enjoyed about my volunteer work and how that influenced me in becoming a doctor, but isn't that what I will be writing in the EC section as well (especially if it's going to be one of my top three most influential EC activities)?

I see... So it shouldn’t necessarily be “what event made or caused you to want to be a doctor”

No, it doesn't have to be one event. The point is to explain why you want to be a doctor. No one can answer that but you.

You can still write about your volunteer work in your PS even though you mention it in the ECs. Just don't mention the same exact stuff or the reader will get bored. If your volunteer work is really the driving factor in pursuing medicine, then you should definitely write about it.
