I worked for 5 years in a standalone PES as a tech prior to medical school. I worked in both the ER and the inpatient unit, and worked the crisis hotline also. My whole job was centered around direct patient contact, deescalation, vitals, admissions, etc. I'm just wondering how much this experience might actually help my application to psychiatry residency, and if I should get a letter from my former employer or something to include in the application? Thanks!

YES! It should help.
I was a psych tech and then worked in Mobile Crisis and the PES before med school. I certainly found a way to incorporate all that experience into my personal statement - but I didn't have any LOR from them in my app packet.
If any other those supervisors were still in those jobs, I would have made sure I found a way to get that into the hands of the PD's to whom I was applying. Maybe something like mailing 2-3 of them to the PD a week or so after sending out other info, with a note that "I'm sorry. I apparently forgot to include these in the original mailing. Please excuse me for taking more of your time." That way (s)he sort of has to look at them to see what they are.
