I was wondering if for the listing of awards, and also mentioning them in our statement, should we use american spelling at all times even if our award was listed in the British/Canadian spelling (i.e. honour, colour etc.)

If it is the actual title of an award or scholarship, I would enter it as it was orginally spelled. You'll be able to enter who the award is from and, anyways, I think it'll draw more attention to it.
