This sort of goes with some of the other threads, but;

Has anyone ever heard of people sending "update" LORs from vets/academics to schools where they are alternate listed? I'm sure some vets have probably unsolicited, made calls/letters to schools to make a final push for a student but I'm unsure how that is reflected.

It may seem very pushy but it may just be another "stick in in your file thing."

Anyone heard of this happening and/or the effect? Ideas?

I am not so sure but I have a vague idea about this type of thing.

I went back to visit my undergrad department (very small school, very excellent knowledgeable faculty and very tight with students) and while I was leaving the dept heads office he wished me luck with the application process. I said something to the effect of "I sure do need it! If you feel the urge, feel free to call the school and tell them how awesome I am and they need to have me!" His response was something to the effect of "somebody already has"

So although I am not 100% I believe this does happen in some cases? But I do not know about letters.

I also have a LOR from a professor at my state vet school (worked there for 2 summers-research) who works closely with a clinician whom I am positive is on the admissions committee (he told me personally). So in that case, I am sure there is some conversation going on... whether it is good or bad... well... I'll find out in a few weeks.
