My main question is, when do you take the DAT, when do you start applying to D-Schools, and when do you go for interviews?

You can take that DAT whenever... I would take it right after you finished taking the courses leading up to the DAT. Particularly right after Ochem. You want to submit your application starting June 1st. Take the DAT before this date. Interviews vary greatly depending on schools. Generally, Interviews range from mid-august till march. But the first day dental schools send out acceptance offers is December 1st. So you want to get interviews before that day.
 
Take DAT in April/May. Apply in June. Submit by late June so you're complete early July. My first interview was mid/late September.

Edit: Make sure you have your LOR's in, you can start sending them June 1st and I would recommend having your professors/doctors type them up before then so they can just send them in via email. Also, like mentioned, the transcripts take a while to be processed and it takes a good 3-5 weeks for the GPA to be calculated. Take this into consideration.

I was confused about this too around a year ago so here:

There's nothing set in stone but make sure to apply early and take the DAT early too. AADSAS opens June 1 and you can submit it any time after that but you have to send your transcripts to AADSAS in Chicago for them to calculate your GPA and everything (that takes between 2-5 weeks depending on when you submit it and how many ppl there are infront of you). You also have to send them your LORs.

I took the DAT after I applied and it was a mistake. It took a little under a month for schools to get my DAT scores so they didn't even look at my application until it was complete. Take the DAT before June 1 if you want an an early application but it's by no means required.
 
So June 1st after Junior year? So does that mean take the DAT during junior year, start applying June 1st after junior year but before senior year, and you start getting interviews from mid-august until march during your senior year, and the earliest that D-Schools send out acceptance letters is Dec. 1 of senior year? Am I understanding correctly?
