Pre-med reqs 'expired', should I take extra classes?

I was a humanities major in undergrad and completed my degree and pre-med pre-reqs from 2016-2020 (cGPA 3.96, sGPA 3.94*). I am currently in a humanities masters and will finish in 2027. I will be applying in the 26-27 cycle.

I learned that some schools want to see recent completion of science classes and that my pre-reqs would be too old. To that end, I'm currently taking cell biology at a state university. I will also take the MCAT this summer. I'm on track for an A+ in cell bio. Assuming I score high on the MCAT, should I take more science classes? I can take genetics and molecular bio** at the same state university next year concurrently with my masters, but if I could I'd prefer not to (save $$ and allow for more time pursuing relevant research interests in my masters). I'd be taking them after the MCAT, so the only point would be to prove I can still do well in the sciences.

*includes Bio + lab, Gen Chem + lab, OChem + lab, Biochem, Physics + lab, Statistics. Not included in sGPA but relevant classes I've taken are Psych and Soc
**I picked these three classes because I saw many schools recommended them specifically for upper-div bio classes.

It might not hurt to have more biomedical science courses. MSAR lists "recommended" courses for each school, but take a look at what classes are included on the standard program profile. Ask admissions professionals representing schools you want to attend.
