the majority of my lectures have been taught by professor assistants and lab courses by TA's. I know dental schools don't accept letters from TA's. but what about professor assistants?

You mean assistant professors. Assistant prof, associate prof, and full professors are professors while TA's are usually graduate students, sometimes post docs and seldom professors.
