Great GPA!
Your shadowing (generally considered to be a passive observership) sounds great, but most med schools also expect to see active involvement with patients. Do you have any experience helping sick people? If not, you might consider starting to volunteer in a clinical environment (hospital, clinic, rehab, hospice, nursing home, etc.) for 3-4 hours a week. Community service is also generally expected on the application. What have you given your time to that helps the community? Your leadership and research seem fine.
Numbers-wise, those applying with your stats through AMCAS have historically had a 42.5% of an acceptance, but optimal ECs, LORs, good PS, and interview skills are assumed. With three more points on the MCAT, chances rose to 68.3%. If you live in a state with a less-selective state med school, your chances of being within those statistics are improved.
