So, I just signed up for DAT on the ADA website and I got the confirmation letter right after I signed up. It says in the email that the DAT is being processed on Tuesday. Does that mean that I have to wait until next Tuesday or Wednesday to schedule the test date?

I believe you have to wait for the second email that will allow you to schedule a test date/time. The initial automatic generated email you received upon signing up is just a confirmation that you signed up. Once you receive the second email, you have up to a year to take the DAT. My guess about the email saying that processing will be done on Tuesday is probably that they'll process your signup then.
