From what I hear from others about scribing (n=4) it's a great opportunity to learn more about the field and the hours can be flexible enough to accomodate other activities and ECs. But don't rule out a research assistant job because you think you wouldn't be able to do everything you listed above - I'm in one now where I see patients every day, I get to work closely with doctors, I'm learning so much all the time AND I still feel like I'm "taking a break" and that I have time to hang out with friends/family and do personal, soul-enriching things. My best advice to you is to keep your options as open as possible for now, especially since you're just starting the whole process.
