I will be interviewing with several companies/hospitals next week. I know which one I'd prefer, but how do I keep the other people thinking that I'm interested before/if I get an offer from the place I really want? Will most places give you a few days to think over their offer (if I am so lucky to receive one?) and also, Whats the proper way to pull yourself from an interview process, just a nice email?

Treat each interview like it's an interview for your dream job. At the end of the interview, ask them what the time frame for them contacting you again would be. They'll typically give you a couple of days to think about the offer, although the time frame depends a lot on how much they like you, how much they like the other interviewees, and what their need is at that moment. The crappy part about job offers is the waiting - you don't know what else is coming.

How to withdraw gracefully depends on the context of the previous conversation. If it was all phone calls, you're probably safe with that. Likewise, an email is fine if you've only ever communicated via email.
