I have one professor from whom I feel reasonably comfortable obtaining a LOR. The rest will come from physicians and my boss at work. I am a year out of college and I can't just ask for LOR from profs. I rarely talked to. A lot of schools that I am looking at require two letters from science profs. What should I do about this? Are these "requirements" firm or a guideline? What has been your experience? Thanks for your help.

Do you want to apply to these schools? If so, you need the correct letters. Do what you have to do to get them. A year out of college is nothing; there are many people who are much further removed from their college years. So email some professors and ask them. Offer to send them your personal statement and a resume/CV if you think that'll help them write you something halfway decent.

Sure. Face-to-face can be a good thing. If you're uncomfortable just popping in, you could always schedule a time to chat.
